A type of wheat-flour noodle of Japanese cuisine. Hot udon in broth topped with thinly sliced green onions, and a slice of fish cake.

 

*dendasi – a class of soup and cooking  stock fundamental to Japanese cooking. Base for miso soup, clear broth, noodle broth.
